Apple Season Recipe

This September at Bee Sew Inspired, we are getting obsessed with all things APPLE SEASON! So, it is not surprise that we needed to share one of our favorite apple recipes with you this month!!! These Apple Pie Muffins are delicious dessert-inspired muffins and an easy recipe for beginning bakers. Fresh apples in a spiced muffin topped with a delicious crumble topping!


As they say, "An Apple A Day"..... so let's load up on all things apples this month and put all those fresh fall apples to good use this month!




Apple Pie Muffin Recipe


Ingredients

  • 1 1/2 cups brown sugar

  • 2/3 cup oil

  • 1 egg

  • 1 cup buttermilk

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla

  • 2 1/2 cups flour

  • 2 cups chopped apple


For the topping

  • 1/2 cup brown sugar

  • 1/3 cup flour

  • 1/4 cup butter

  • 1 teaspoon cinnamon



Instructions

  1. Preheat your oven to 350 F and prepare your muffin tins with paper liners.

  2. Combine sugar, oil and egg in a large mixing bowl

  3. Whisk together buttermilk, baking soda, salt and vanilla.

  4. Alternate adding the flour and the buttermilk mixture to the egg mixture. Fold in the chopped apples. Do not overmix! The batter should look slightly lumpy- that's what you want.

  5. Scoop the batter into the prepared muffin tins.

  6. Top each unbaked muffin with a spoonful of crumb topping and bake the muffins at 350 degrees for about 23-25 minutes or until the muffins are golden brown and a toothpick inserted into one of the muffins comes out clean.

  7. Let the muffins cool in their tins for about 5 minutes before removing them to a wire rack to cool completely.
