Apple Pie Muffin Recipe
1 1/2 cups brown sugar
2/3 cup oil
1 cup buttermilk
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
2 1/2 cups flour
2 cups chopped apple
For the topping
1/2 cup brown sugar
1/3 cup flour
1/4 cup butter
1 teaspoon cinnamon
Preheat your oven to 350 F and prepare your muffin tins with paper liners.
Combine sugar, oil and egg in a large mixing bowl
Whisk together buttermilk, baking soda, salt and vanilla.
Alternate adding the flour and the buttermilk mixture to the egg mixture. Fold in the chopped apples. Do not overmix! The batter should look slightly lumpy- that's what you want.
Scoop the batter into the prepared muffin tins.
Top each unbaked muffin with a spoonful of crumb topping and bake the muffins at 350 degrees for about 23-25 minutes or until the muffins are golden brown and a toothpick inserted into one of the muffins comes out clean.
Let the muffins cool in their tins for about 5 minutes before removing them to a wire rack to cool completely.
